  • Fresh green beans - choose fresh green beans that are bright in color and free of excess moisture.
  • Red onion- you can substitute with shallots or green onions for a milder onion flavor.
  • Italian dressing - use your favorite store-bought brand or make a homemade vinaigrette.
  • Dill - should be fresh, but you can use dried if that is all you have available.

How to make a green bean salad

Trim the ends of the green beans and cut or snap into 2- to 3-inch pieces. Bring a large pot of lightly salted water to boil. Add the green beans, and cook for 7 minutes.

Drain immediately, and rinse with cold tap water to stop cooking. Set aside into a large mixing bowl. Slice the red onion into very thin slices.

Preheat a small saute pan on medium heat. Add a small amount of olive oil to the pan. Add the onions, then season to taste with salt and pepper. Cook until slightly softened, then remove to bowl with green beans.

Chop the fresh dill and add green beans and onions to the bowl. Add the Italian dressing and feta cheese. Toss gently to combine. Cover and refrigerate for two hours before serving.

Tips for Success

Be sure not to overcook your green beans; we still want them to have a nice bite for this green bean and feta salad.

You can use the onions raw if you wish. Add some extra flavor to the salad with cherry tomatoes or toasted almonds.

Ingredients

  • 2 pounds green beans ends trimmed, cut into 2- to 3-inch pieces
  • ¼ cup Feta cheese crumbled
  • ¼ cup red onion sliced thinly, can substitute with shallots or green onions
  • ¼ cup fresh dill chopped, may use dried
  • ½ cup Italian salad dressing
  • 1 teaspoon olive oil for sauteing
  • salt to taste

Instructions

  • Trim the ends of the fresh green beans and cut into roughly 2- to 3-inch pieces.
  • Bring a large pot of lightly salted water to a boil, and add the green beans. Cook for 7 minutes, then drain immediately, and place in ice water to stop cooking.
  • Lightly saute the onions in olive oil.
  • In a large bowl, combine the cooked green beans, onions, dill, Italian dressing, and feta cheese. Toss to combine.
  • Refrigerate for two hours prior to serving. Can be made ahead of time the day before.
  • Keep refrigerated in an airtight container for up to one week. Serve cold.

Notes
